Instructions
Pre-Cooking Preparation
Prepare all of the ingredients.
Rinse the split yellow lentils (moong dal) in water and soak for at least 30 minutes to soften them.
Chop any vegetables that you plan to add to the curry, such as spinach or tomatoes.
Cooking Steps
In a pot, add the soaked and rinsed split yellow lentils (moong dal) and enough water to cover the lentils. Bring to a boil, then reduce the heat to medium-low and let simmer for 15-20 minutes or until the lentils are soft and fully cooked.
In a separate pan, heat oil and add mustard seeds. Once they begin to pop, add curry leaves and red chili (if using).
Add in the turmeric, cumin powder, coriander powder, and red chili powder to the pan and cook for a minute or until fragrant.
If adding vegetables, add them to the pan and cook until they are tender.
Add the cooked lentils and any remaining water from the pot to the pan. Bring to a simmer and let cook for a few minutes until the curry thickens.
If adding grated coconut, add it now and stir until well combined.
Serve hot with rice or rot
