Pre-Cooking Preparation
Before cooking, it's important to prepare all of the ingredients. This includes measuring out the rice flour, coconut milk, yeast, sugar, and salt. It's also important to finely chop the onions and tomatoes, and measure out the spices and seasonings.
Cooking Steps
Start by mixing the rice flour, coconut milk, yeast, sugar, and salt together in a large mixing bowl to form a smooth batter.
Cover the bowl and leave it in a warm place for several hours or overnight to ferment.
Heat the appam pan over medium heat and pour a ladle of the fermented batter into the pan.
Tilt the pan to spread the batter evenly and cook
Once the edges start to turn golden brown, use a spatula to gently lift the appam from the pan.
To prepare the stew, heat oil in a pan and add in the chopped onions and tomatoes. Cook until they become soft and translucent.
Add in your choice of vegetables or meats, along with the spices and seasonings. Cook for a few minutes until the vegetables are tender and the meats are fully cooked.
Add in the coconut milk and bring the stew to a simmer. Allow it to cook for a few more minutes until the sauce thickens.
Serve the appam hot with the stew on the side or pour the stew over the appam.
