Instructions
Pre-Cooking prep steps
In a large bowl, mix together the chicken cubes with red chili powder, cumin powder, coriander powder, turmeric powder, salt and pepper.
Cover the bowl and marinate the chicken for at least 2 hours in the refrigerator.
Heat the oil in a large pot or Dutch oven over medium heat.
Add the onions, garlic, and ginger and sauté until the onions are translucent.
Cooking steps
Add the marinated chicken to the pot and cook for about 5 minutes, until browned.
Add the tomatoes and stir well.
Add 1/2 cup of vinegar and 2 cups of water, bring the mixture to a boil, then reduce the heat and let it simmer for about 1 hour, or until the chicken is tender.
Stir occasionally, until the chicken is cooked through and the sauce has thickened.
Remove from heat and garnish with fresh cilantro.
Serve the hot Chicken Vindaloo with rice or naan bread.
