Instant Mango Kulfi is a traditional Indian dessert that is made with mango puree, milk, sugar, and a blend of spices. The dessert is typically frozen in a mold and then served as a frozen treat. The Instant Pot makes the cooking process much easier and faster, allowing you to enjoy the sweet and creamy taste of mango kulfi in no time.
Assemble all ingredients together to avoid last minute rush.
Wash, peel and chop mangoes into cubes. Then, add cubes in a Blender and blend to a smooth puree.
Also, make coarse powder of pistachios. Alternatively, could use almonds or cashews.
Soak saffron strands in 2 tbsp warm milk.
Method
Now, in a Mixing Bowl add the whipping cream, mango puree, condensed milk, chilled milk, cardamom powder, saffron strands mixture and powdered pistachios.
Mix all ingredients thoroughly with each other. Make sure everything mixed well. Alternatively, you could blend them all in a Blender for 30-40 seconds.
Transfer the mixture to Kulfi Molds, or Popsicle Molds or small Glasses.
Cover Glasses with aluminum foil or if using Molds, cover with lids. Freeze for 7-8 hours or overnight.
If using glasses, take out after 2 hours and pierce foil in between and put ice cream sticks in it. Again, freeze them overnight.
Once Kulfi is set. Take them out from Molds or Glasses and garnish with powdered pistachios.
Dry fruits: Feel free to add dry fuits of your choice like almonds or cashews.
Whipping cream: If whipping cream is not available, add heavy cream in the recipe.
Sweetness: Add as much condensed milk as you want according to your sweetness desire.
Choosing mangoes: Choose ripe mangoes for best results, as they are sweet. Adding sour mangoes can upset your stomach. You could also use canned mango pulp.
