Aam Panna is a popular Indian summer drink made from raw green mangoes, mint leaves, spices and sugar. The mangoes are cooked, mashed and blended with the other ingredients to make a smooth puree, which is then chilled and served. Wash and peel the mangoes.
Cooking
Pressure cook the mangoes over medium heat for 2 – 3 whistles along with water. Let the steam release from the pressure cooker naturally.
Open the lid and transfer the boiled mango pulp along with water in a Bowl. Squeeze the mangoes to collect the pulp with your hands. Remove the stones, if any, in the mangoes. Allow the mango pulp to cool down.
Blend together the mango pulp, sugar and black salt until smooth. Taste and adjust the sugar and salt according to your taste.
To serve, add ¼ cup Aam Panna in each glass. Add ice-cubes, roasted cumin powder and pour chilled water in each glass. Stir to combine nicely.
Garnish with fresh mint leaves. Serve chilled Aam Panna!
Sugar: You can also use light brown sugar, jaggery, or honey in place of white sugar.
Wash Mangoes First: It is an important step, do not skip it.
