Filter coffee is a traditional South Indian coffee made using a metal filter and brewed coffee decoction. The coffee decoction is made by mixing ground coffee with water and then passed through a metal filter. The decoction is then mixed with hot milk and served. This coffee is known for its rich, strong and aromatic flavor, making it an essential part of the South Indian breakfast. Fit the top vessel on the lower one in a Coffee Filter. Now, evenly add coffee in the vessel with the perforations.
Place the pressing disc with the handle on the coffee powder. Heat 1 cup water in a Saucepan and let it come to a boil.
Now, gently pour the water in the top vessel and cover it with the lid.
Let the coffee decoction percolates in the lower vessel.
Now, heat full fat milk and boil it.
Now take a tumbler or glass and add 2 tsp sugar in it.
Add 1/4 cup hot boiling milk directly in the tumbler. I usually strain milk while pouring it in the glass to avoid the malai that comes with the boiling milk. If you like malai in your coffee, then can add milk without straining it.
Now pour ¼ cup of the brewed coffee. You can add less or more or as much as you like.
Now, take a small pan with the handle and poured back and forth the coffee from glass to pan so that sugar dissolves and a layer of foam forms on the coffee. Repeat this process 2-3 times.
Choosing Coffee Powder: Choose a good quality filter coffee powder to make this Filter Coffee.
Adding Sugar: You can choose any sugar- brown or white as per your choice or completely avoid it.
Choosing Milk: You could also choose low fat milk but full fat milk gives better taste to the coffee.
For vegan filter coffee: Choose plant based milk like almond milk, soy milk, cashew milk or oats milk and add milk while coffee is hot. Do not boil plant based milk.
