You can use any oil of your preference. In India, my mother uses mustard oil to make this recipe but since my husband does not like mustard oil so I prefer canola oil. The other variables could be sunflower oil, olive oil, peanut oil, soyabean oil etc.
If making for children keep spices minimum but if you like spicy, simply add more red chili powder and 1-2 chopped green chilies while cooking Aloo Gobi.
