Mushroom Fry (Goan Style) is a popular dish in Goa that is made with mushrooms cooked in a spicy, tangy, and flavorful masala. This dish is a delightful fusion of Goan and Portuguese culinary influences, with a rich blend of spices and the use of vinegar to bring out the tanginess. The unique preparation method involves sautéing the mushrooms and spices together, resulting in a slightly crispy texture, bursting with flavors.
Clean the mushrooms thoroughly by wiping them with a damp cloth or paper towel. Avoid washing them under running water, as they tend to absorb water and become soggy. Once cleaned, halve the mushrooms and set them aside.
Thinly slice the onions and finely chop the tomatoes and green chili. Keep them ready for cooking.
Cooking Steps
Heat oil in a large pan over medium heat. Add the sliced onions and sauté until they turn golden brown.
Add the ginger-garlic paste and green chili to the pan and cook for 2-3 minutes, or until the raw aroma of ginger-garlic disappears.
Add the chopped tomatoes and cook for 5-6 minutes until they turn soft and mushy.
Now, add the turmeric powder, red chili powder, coriander powder, and garam masala. Stir well and cook the spices for 2-3 minutes.
Add the halved mushrooms to the pan, mix well, and cook for 8-10 minutes, stirring occasionally, until the mushrooms are tender and slightly crispy.
Pour in the vinegar and season with salt. Cook for another 2-3 minutes, allowing the flavors to blend well.
Turn off the heat and garnish with fresh coriander leaves.
