Instant Pot Spinach Rice, also known as Palak Rice, is a flavorful Indian rice dish that combines the earthy flavors of spinach with fragrant spices like cumin, coriander, and garam masala. The dish is typically made by cooking rice with a puree of fresh spinach leaves, resulting in a vibrant green color and a subtle, vegetal flavor that pairs perfectly with a variety of curries and other Indian dishes.
Assemble all ingredients together to avoid last minute rush.
Soak rice for 30 minutes and rinse with running water until water comes clean.
Chop onions in thin slices. And peel & grate the ginger.
I have used store bought tomato puree. You can also use homemade tomato puree. Simply boil the tomato first, peel the upper layer and blend till smooth paste.
If using fresh spinach, then there are two ways to use it – One, wash and finely chop to add in the rice. Second, wash, boil and blend to thick puree to add in the rice. Use as per your preference.
Cooking
Start IP at saute mode and add oil in it. Then, add sliced onions after a minute, when oil is slightly heated.
Now, add grated ginger and saute for 1-2 mins till onions turn translucent.
Then, add tomato puree, cumin seeds, salt, coriander powder, red chili powder, spinach in the Instant Pot.
Stir till palak cooked completely. Fresh spinach would take longer time to cook.
Then, add peas. Mix with the spinach.
Add soaked rice and water. Close IP with its lid and starts cook mode or white rice mode, depending on the brand of your IP.
When cook time over, let the pressure releases automatically.
Your Spinach Rice is ready to serve. Enjoy with the bowl of raita!
Spinach: Since, fresh spinach is not commonly available in Berlin, I have used frozen spinach here in this recipe. If you live in Asian countries or where fresh spinach is commonly available, add them after the tomato puree and saute till they are cooked properly.
Salt & Spices: You can add chopped green chilies also to give spicier taste to the Pulao. Add salt to taste.
Quantity of water: It depends on the quality of rice. Since, I have soaked them before using so I used almost same quantity of water. If using rice before soaking, might require more water. Add the water accordingly!
