Ingredients
  

For the Dosa Batter:

  • 1 cup basmati rice
  • 1/2 cup urad dal
  • 1/4 tsp fenugreek seeds / methi seeds
  • Salt

For the Filling:

  • 2 cups Potatoes
  • 1 cup coconut
  • 1/4 cup Onions
  • 1/4 cup coriander leaves / cilantro
  • 1/4 cup mint leaves
  • 1 tsp mustard seeds / rai
  • 1 tsp Cumin (Jeera)
  • 1 tsp split black gram
  • 1 tsp Red Chilli Powder
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • Salt

Instructions
 

Pre-Cooking Prep Steps:

  • Soak the rice and urad dal separately in water for at least 6 hours.
  • Drain the water and grind the rice and urad dal separately to a fine paste.
  • Mix both the pastes together, add salt, and let it ferment overnight.

Cooking Steps:

  • Heat a griddle or tawa and grease it with oil.
  • Take a ladleful of batter and pour it on the griddle.

  • Spread it evenly and add the filling of your choice on one half of the dosa.
  • Once the edges start to turn golden brown, fold the dosa over the filling.
  • Cook until both sides are golden brown and crispy.
