Ingredients
  

  • 1 cup mixed vegetables such as eggplant, potato, and bitter gourd
  • 1/4 cup green gram lentil / moong dal
  • 1 tsp Cumin (Jeera)
  • 1 tsp Fennel (Saunf)  
  • 2 green chillies chopped
  • 1 tsp ginger paste
  • 1 tsp Oil
  • Salt to taste
  • Water as needed

Pre-Cooking Prep Steps

  • Dice the mixed vegetables and set them aside.

  • Soak the moong dal in water for at least 2 hours.
  • Drain the water and set the moong dal aside.

Cooking Steps

  • Heat a pan over medium heat and add the mustard oil.
  • Once the oil is hot, add the cumin seeds and fennel seeds and sauté for 1-2 minutes, until fragrant.
  • Add the green chilies and ginger paste and sauté for an additional 1-2 minutes.
  • Add the diced mixed vegetables and sauté for 5-7 minutes , until the vegetables are slightly tender.
  • Add the soaked moong dal and salt to taste, and mix well to combine all the ingredients.
