Ingredients
  

  • 1 cup rajma
  • 1 tbsp bay leaf / tej patta
  • 1 tbsp black cardamom
  • 1 tsp salt
  • 4 cup water
  • 1 tbsp ghee / clarified butter
  • 1 tsp cumin / jeera
  • 1 inch cinnamon
  • 5 pcs cloves
  • 1 whole Onions finely chopped
  • 1 tsp ginger garlic paste
  • 1 tbsp chilli
  • 2 cup Tomato
  • ¼ tsp turmeric
  • 1 tsp kashmiri red chilli powder
  • 1 tsp coriander powder
  • ½ tsp cumin powder
  • ½ tsp aamchur / dry mango powder Aamchur
  • ½ tsp garam masala
  • ½ tsp salt
  • 1 tsp kasuri methi / dry fenugreek leaves crushed
  • 2 tbsp coriander leaves / cilantro finely chopped

Instructions
 

  • Ensure that all your ingredients are prepped, organized and within easy reach.
  • Heat 1 tbsp ghee and saute 1 tsp cumin, 1 inch cinnamon and 5 cloves in a large wok or pot. Add in 2 onions, 1 tsp ginger garlic paste, 1 chilli and saute until the onions turn golden brown. Then add 2 cups of tomato pulp. Cover and cook for 10 minutes.
  • Keeping the flame on low add ¼ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder, ½ tsp cumin powder, ½ tsp aamchur, ½ tsp garam masala and ½ tsp salt and saute until the spices turn aromatic.

  • Add in cooked rajma and mix well. Cover and simmer for 15 minutes or until the curry thickens.
  • Then add 1 tsp kasuri methi, 2 tbsp coriander and mix well.

Notes & Tips

  • Rajma beans are easy to digest hen soaked
  • The rajma beans should be cooked very well. and must be soft
  •  For a gluten-free recipe, remove asafoetida (hing)
  • Prep - Soak the Rajma beans for 7-8 hours if using a pot to cook
  • Canned tomatoes can also be used, if fresh is unavailable
