Ingredients
Ragda
- 2 tsp oil
- 2 pcs bay leaf / tej patta
- ½ tsp cloves
- 3 pods cardamom / Elaichi
- 1 tsp Cumin (Jeera)
- 1 tsp Fennel (Saunf)
- 1 pinch Asafoetida / hing
- 1 tsp Onions finely chopped
- 1 tsp chilli
- 1 tsp ginger garlic paste
- ½ tsp turmeric
- 1 tsp Red Chilli Powder
- ½ tsp cumin powder
- 1 tsp coriander powder
- 1 tsp aamchur / dry mango powder
- 1 tsp salt
- 1 cup white peas soaked overnight
- 3 cup water
- 2 whole Potatoes boiled & mashed
- 1 tsp chaat masala
Aloo tikki / Patties
- 3 whole Potatoes boiled & mashed
- ¼ cup poha / flattened rice / rice flakes soaked, thick
- ¼ tsp cumin powder
- ½ tsp coriander powder
- ½ tsp Red Chilli Powder
- 1 tsp chaat masala
- ½ tsp garam masala
- 2 tsp chilli finely chopped
- ½ tsp ginger paste
- 2 tbsp coriander leaves / cilantro finely chopped
- ½ tsp salt
- 1 tsp Oil for frying
- 1 tsp Tamarind chutney
- 1 tsp Chaat masala
- 1 tsp Salad finely chopped
- 1 cup Sev or mixture
- 1 portions Green chutney
Instructions
- Make sure all your ingredients are ready
- Heat 2 tbsp oil. add 3 bay leaf, ½ tsp cloves, 2 pods cardamom, 1 tsp cumin, 1 tsp fennel and pinch hing in a pot (or cooker) and saute on low flame until the spices turn aromatic.
- Add 1 onion, 1 chilli and 1 tsp ginger garlic paste. saute well. In addition, keeping the flame on low add ½ tsp turmeric, 1 tsp chilli powder, ½ tsp cumin powder, 1 tsp coriander powder, 1 tsp aamchur and 1 tsp salt. saute until the spices turn aromatic. Then add 1 cup white peas and 3 cup water.
- Pressure cook for 3 whistles or until the peas are cooked well.
- Check consistency. Add water if needed. Then, add 3 potatoes and 1 tsp chaat masala, which need to be mixed well. Boil. Ragda is ready. Keep aside.
To make aloo Tikki:
- In a bowl take 3 potato, ¼ cup thick poha. Add ¼ tsp cumin powder, ½ tsp coriander powder, ½ tsp chilli powder, 1 tsp chaat masala, ½ tsp garam masala and 2 chilli, ½ tsp ginger paste, 2 tbsp coriander and ½ tsp salt. Mix well.
- Prepare small patties, which need to be shallow fried on medium flame (pan fry or deep fry also possible in some varioations). Fry (all sides) until it turns golden and crisp.
- Aloo tikki is ready. keep aside.
- how to make ragda pattice chaat:
- Add green chutney and tamarind chutney to Aloo Tikki.
- Then, add ragda over it and garnish with chopped onions, sev and chaat masala.

Notes & Tips
- Dry green peas can be used for making ragda curry
- Best to prepare chutneys in advance
- Soak the peas for 8-10 hours
