Step by Step Potato Curry Recipe / Aloo Ki Sabzi
Potato Curry Recipe / Aloo Ki Sabzi
Ingredients
- 4 potatoes
- 1 Onions
- 2 to Tomato
- 2 cloves garlic
- 2 cups water
- 1 tsp Salt
- ½ inch ginger
- 2 tbsp oil
- ½ tsp turmeric powder
- ½ tsp coriander powder
- ½ tsp Red Chilli Powder
- ½ tsp Garam Masala
- ½ tsp cumin/ jeera
- ¼ cup coriander leaves / cilantro
Instructions
Preparation
- Assemble all ingredients together to avoid last minute rush.
- Wash, peel and chop potatoes into small cubes.
- Wash and finely chop onion, tomatoes, garlic, ginger and fresh coriander leaves.
Cooking
- Take a Kadai or Cookpotand heat oil to low – medium flame.
- Now, add finely chopped ginger and garlic and sauté till raw aroma goes away.
- Then, add chopped onions. Keep on stirring and sauté till they turn translucent.
- Now, add chopped tomatoes and mix very well.
- Cover the Kadai and simmer on a low flame till the tomatoes soften and become mushy. Keep a watch till tomatoes are cooked properly.
- Now, add turmeric powder, cumin, red chilli powder, coriander powder and garam masala powder.
- Mix everything very well till the spices combine with onion and tomatoes.
- Now add chopped potatoes and salt and mix everything well.
- Also, pour 2 cups water and mix again.
- Cover the Kadai and let the curry simmer on a medium heat until the potatoes are cooked.
- Once the potatoes are cooked, check the consistency of curry as per your desire.
- At the end, switch off the flame and garnish your potato Curry with fresh chopped coriander leaves.
- Serve hot Potato Curry or Aloo ki Sabzi with Poori, Paratha, Roti, Naan, or Rice.

- Potatoes: You can choose boiled potatoes, mashed potatoes also for preparing this Potato Curry.
- Making this Curry for Fasting: Just skip garlic and onion from the ingredients and cook rest with the same procedure. You are ready with Potato Curry for fasting.
- Satvik Curry: You can also make Satvik Potato Curry without ginger, garlic, onion and tomatoes. Just cook your curry with above mentioned spices and water. Let the potatoes simmer with water and spices and within 8-10 minutes, your Satvik Potato Curry is ready to serve.
- Spices: You can always adjust spices and salt as per your taste preference. If you like, can also add 1 chopped green chilli while making this curry.
- Oil: You can choose any neutral tasting oil to prepare Potato Curry Recipe. In India, mostly prefer to use mustard oil to prepare this recipe but I have used olive oil as my husband does not like taste of mustard oil.
