Ingredients
  

  • 1 cup masoor dal or orange lentils or split yellow lentils moong dal
  • 4 cups water
  • 2 tbsp oil
  • 1 tsp mustard seeds / rai
  • 10-12 curry leaves
  • 1 red chillies optional
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 2 tsp coriander powder
  • 1 tsp Red Chilli Powder optional
  • 1 cup mixed vegetables optional
  • 1/4 cup coconut optional
  • Salt

Instructions
 

Pre-Cooking Preparation

  • Prepare all of the ingredients.
  • Rinse the split yellow lentils (moong dal) in water and soak for at least 30 minutes to soften them.
  • Chop any vegetables that you plan to add to the curry, such as spinach or tomatoes.

Cooking Steps

  • In a pot, add the soaked and rinsed split yellow lentils (moong dal) and enough water to cover the lentils. Bring to a boil, then reduce the heat to medium-low and let simmer for 15-20 minutes or until the lentils are soft and fully cooked.
  • In a separate pan, heat oil and add mustard seeds. Once they begin to pop, add curry leaves and red chili (if using).
  • Add in the turmeric, cumin powder, coriander powder, and red chili powder to the pan and cook for a minute or until fragrant.
  • If adding vegetables, add them to the pan and cook until they are tender.
  • Add the cooked lentils and any remaining water from the pot to the pan. Bring to a simmer and let cook for a few minutes until the curry thickens.
  • If adding grated coconut, add it now and stir until well combined.
  • Serve hot with rice or rot
