Ingredients
  

  • 1 cauliflower / gobi chopped into small florets
  • 2- 3 potatoes peeled & chopped into small pieces
  • 1 tbsp ginger
  • 3 tbsp oil
  • 2 tsp salt
  • 1 tsp turmeric powder
  • 1 tbsp Cumin (Jeera)
  • 1 tsp coriander powder
  • ½ tsp Red Chilli Powder
  • pinch Asafoetida / hing
  • coriander leaves / cilantro chopped (for garnishing)

Instructions
 

Preparation

  • Assemble all ingredients together to avoid last minute rush.
  • Chop 1 cauliflower into smaller florets.

  • Peel and chop 2 potatoes into smaller pieces.

Cooking

  • Heat 3 tbsp oil in a pan over medium heat.
  • Add cauliflower florets. Fry for a minute or two.

  • For tanginess, you can add dry mango powder/amchur powder or chaat masala or squeeze some lemon juice before serving.
  • You can use any oil of your preference. In India, my mother uses mustard oil to make this recipe but since my husband does not like mustard oil so I prefer canola oil. The other variables could be sunflower oil, olive oil, peanut oil, soyabean oil etc.
  • If making for children keep spices minimum but if you like spicy, simply add more red chili powder and 1-2 chopped green chilies while cooking Aloo Gobi.
