Ingredients
  

  • 200 g basmati rice 200 grams
  • 3 tbsp ghee / clarified butter clarified butter - 3 tbsp
  • 100 g sugar 100 grams
  • Saffron / Kesar a pinch
  • 1 stick Cinnamon
  • 4 pods cardamom / Elaichi
  • 2 bay leaf / tej patta
  • 4 Cloves
  • 1 tsp Salt
  • 2 cups Water
  • 30 g Raisins
  • 30 g cashew
  • 30 g almond / badam

Pre-Cooking Prep Steps (Total Time: 30 minutes)

  • Rinse the rice in cold water and soak it in water for 30 minutes.

  • In a small bowl, soak a pinch of saffron in 2 tbsp of warm water.
  • In a pan, heat 3 tbsp of ghee and fry the raisins, cashews, and almonds until they turn golden brown. Remove them from the pan and keep them aside.
  • In the same pan, add the whole spices - cinnamon stick, cardamom pods, bay leaves, and cloves - and fry them for a minute.

  • In a pot, add the soaked rice and 2 cups of water. Add salt and the fried whole spices to the pot and bring it to a boil.
  • Reduce the heat to low, cover the pot with a lid, and let the rice cook for 10-12 minutes, or until the water is absorbed and the rice is cooked.
  • Once the rice is cooked, add the sugar and saffron water to the pot and mix well.
