Ingredients
  

  • 1 cup basmati rice cooked
  • 1-2 potatoes boiled & mashed
  • oil for frying
  • 4 tbsp Besan / Gram flour
  • 1 Onions finely chopped
  • 2 green chillies finely chopped
  • ½ cup green capsicum / bell peppers finely chopped
  • ½ cup French beans finely chopped
  • ¼ cup coriander leaves / cilantro finely chopped
  • 1 tbsp salt
  • ¼ tsp Red Chilli Powder
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • ¼ tsp garam masala

Instructions
 

Preparations

  • Assemble all ingredients together to avoid last minute rush.
  • Wash & finely chop onion, beans, capsicum, green chilli and coriander leaves.

Cooking

  • For Making Rice Cutlet, mix everything except oil in a Mixing Bowl.

  • You can check the spices and salt and adjust as per your taste preference.
  • While mixing, cooked rice will also get mashed with the other ingredients.
  • Shape the mixture into medium sized cutlets or tikkis.

  • In a Frying Pan or Skillet, heat 2 tbsp oil on a low to medium heat.
  • Place the rice cutlets on the Frying Pan.
  • Start shallow frying them from one side and flip one side turned light brown.
  • Flip again and fry till they turn crisp and golden. You will have to flip them a couple of times for even cooking.
  • When nicely crisp and golden, remove them and place them on kitchen paper towel so that any extra oil is absorbed if any.
  • Serve hot Rice Cutlets / Tikkis with coriander chutney or any other sauce of your choice.

  • Spices: Spices and salt can be adjusted as per your taste.
  • Oil: You can use any neutral tasting oil. Some options are sunflower oil, canola oil or olive oil.
  • Airfryer: You can cook these Cutlets in Air Fryer also, by keeping close watch in between the timer. Air fryer will take about 10-12 minutes at 180°C to cook these Rice Cutlets.
