Ingredients
  

For the dough:

  • 2 cups almond flour
  • 1/4 tsp salt
  • 1/4 cup coconut oil
  • 1/4 cup water

For the filling:

  • 2 cups mixed vegetables e.g. potatoes, peas, onions, carrots
  • 1/2 cup paneer / cottage cheese optional
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp Garam Masala
  • Salt and pepper

Pre-Cooking Prep Steps

  • Start by preparing the filling. In a pan, heat some oil and sauté the chopped vegetables and ground meat or paneer (if using) for about 5 minutes.
  • Add the spices (cumin powder, coriander powder, garam masala powder) and mix well. Cook for another 2-3 minutes and then remove from heat. Allow the filling to cool.
  • In a separate bowl, mix together the almond flour, salt, and coconut oil. Slowly add in the water and knead until a dough forms.
  • Roll the dough into a ball and let it rest in the fridge for at least 30 minutes.

Cooking Steps

  • Preheat the oven to 350°F (175°C).
  • Take a portion of the dough and roll it out into a thin circle. Cut the circle into a semi-circle.
  • Place a spoonful of the filling in the center of the semi-circle and fold the dough over to form a triangular shape.
  • Pinch the edges to seal the samosa and then brush with some coconut oil.
  • Place the samosas on a baking tray and bake for 20-25 minutes or until golden brown.
