Step by Step Keto Quinoa Salad Recipe
Keto Quinoa Salad Recipe
Ingredients
- 1 cup quinoa
- 2 tbsp olive oil
- 1 zucchini
- 1 Eggplant / brinjal / baingan
- 1 capsicum / bell peppers
- ½ tbsp vinegar
- ¼ tsp salt
- ¼ tsp black pepper powder
- ¼ cup Green peas
- fresh parsley
- 2 cups water
Instructions
Preparation
- Assemble all ingredients together to avoid last minute rush.
- Wash and diced zucchini, peppers and eggplant and grill them.
- Blanch peas and finely chop parsley leaves.
Cooking
- Add the quinoa in a sieve and rinse under the faucet.
- Boil quinoa in water in a Cookpot over medium heat. When it boils, simmer on low for about 15 minutes or until the water is completely absorbed.
- Transfer to a Bowl and let it cool down.
- Toss the cooked quinoa, vegetables, chopped parsley, vinegar, olive oil, salt and black pepper powder. Mix very well.
