And, the Instant Pot Potato Curry Recipe is one such dish that ticks all the right boxes. Every time I make this dish, it brings back memories of my mother’s traditional cooking style, and the warm and comforting meals we used to have together as a family.

For preparing Potato Curry in Instant Pot, you just need potatoes, onion and tomatoes and your curry is ready. Obviously, we need to cook these ingredients also 😊It is such a versatile curry that you can make this recipe as per your convenience. For example, if you have leftover boiled potatoes or leftover unseasoned mashed potatoes, you can easily make this curry. If fresh tomatoes are not available, then you can use tomato puree. Or, if you don’t want to use onions, then also you can make this curry only with tomatoes and trust me it comes out equally delicious.

It is one of my comforting dish and whenever I have less time for cooking, I always prefer to cook Potato Curry in Instant Pot for menu. It is healthy, easy, quick and very less time consuming. And most importantly, you need very few ingredients. What else can we demand for cooking? Right!

Ingredients
  

  • 4 potatoes
  • 1 Onions
  • 2 Tomato
  • 2 cloves garlic
  • 2 cups water
  • 1 tsp Salt
  • ½ inch ginger
  • 2 tbsp oil
  • ½ tsp turmeric powder
  • ½ tsp coriander powder
  • ½ tsp Red Chilli Powder
  • ½ tsp Garam Masala
  • ½ tsp cumin/ jeera
  • ¼ cup coriander leaves / cilantro

Instructions
 

Preparation

  • Assemble all ingredients together to avoid last minute rush.
  • Wash, peel and chop potatoes into small cubes.
  • Wash and finely chop onion, tomatoes, garlic, ginger and fresh coriander leaves.

Cooking

  • Press the sauté button of your Instant Pot and heat oil in the steel insert. Add garlic and ginger and sauté for few seconds.
  • Add chopped onions and sauté stirring often until onions soften. Add the chopped tomatoes and sauté until the tomatoes soften.
  • Now add all the spices and cumin and mix very well for a 30 seconds. Add the chopped potatoes, salt and 1 cup water. Mix everything very well.
  • Pressure cook on high for 3 to 4 minutes. Do a quick pressure release after 3 minutes.
  • If you curry is too thin, then press the sauté button again and sauté the curry for 5 to 7 minutes until you get the desired consistency. Garnish with fresh chopped coriander leaves and serve hot.
  • You can serve this Potato Curry with Poori, Paratha, Roti, Naan, or Rice.

Notes & Tips

  • Potatoes: You can choose boiled potatoes, mashed potatoes also for preparing this Potato Curry.
  • Making this Curry for Fasting: Just skip garlic and onion from the ingredients and cook rest with the same procedure. You are ready with Potato Curry for fasting.
  • Satvik Curry: You can also make Satvik Potato Curry without ginger, garlic, onion and tomatoes. Just cook your curry with above mentioned spices and water. Let the potatoes simmer with water and spices and within 8-10 minutes, your Satvik Potato Curry is ready to serve.
  • Spices: You can always adjust spices and salt as per your taste preference.
  • Oil: You can choose any neutral tasting oil to prepare Potato Curry Recipe. In India, mostly prefer to use mustard oil to prepare this recipe but I have used olive oil as my husband does not like taste of mustard oil.
