Ingredients
  

  • 1 kg potatoes
  • ½ tsp black pepper powder
  • 2 tsp salt
  • 3 tbsp oil
  • oregano or mixed herbs for seasoning as required
  • oil for deep frying

Instructions
 

Preparation

  • Assemble all ingredients together to avoid last minute rush.
  • Wash and peel the potatoes and slice them into ¼ inch strips or about a finger length and thick. Approx 15-16 pieces will be cut from each potato. Keep them in a Big Mixing Bowl.

Cooking

  • Add salt in the Mixing Bowl and rub thoroughly all potato strips until all surfaces are coated. Let them rest for at least 10 minutes. This allows the salt to penetrate deeper into the skin of the potato while also helping draw out any moisture.
  • After this step, rinse off excess salt water by rinsing under running water. Drain well. Keep them on kitchen towel to let them dry.
  • Meanwhile, heat oil in big Kadai or Skillet on high flame.
  • Now, when oil is hot enough, slow down the heat to medium and drop potato strips in it. Make sure they are dried enough.
  • Fry them for 4-5 minutes without stirring; just let the potatoes cook but do not brown them as we will do that in second deep frying.
  • Once done, transfer them into plate with the help of a Spatula, lined up with paper towel so that it will soak excess oil. Let them cool down and put them in refrigerator for 30 -45 minutes.
  • After 45 minutes, heat same oil again and put all cooked fries again in the oil.
  • This time deep fry them till they become crisp and golden brown.
  • Transfer them to Serving Bowl or Tray and sprinkle black pepper and oregano or any mixed herbs of your choice.
  • Serve hot French Fries with your choice of sauce or dip.

Notes & Tips

  • Use High Quality Potatoes: Choose potatoes that are firm with no soft spots. Also avoid any potatoes that have green patches (this means that they've gone bad). I have used medium sized russet potatoes which were around 7 inches long and 2 ½ inches wide.
  • Frying: Keep a watch while frying potatoes both the times so that they will not get burned.
  • Salt & Black pepper powder: You can adjust salt and black pepper powder as per your taste buds.
  • Oil: You can choose any neutral tasting oil. I have used Olive Oil.
