Ingredients
- 3 cups all purpose flour / maida
- ¾ tsp salt
- 1 cup butter, unsalted
- 1 ½ tsp vanilla extract
- 1 cup sugar
- 1 egg
- ¾ tsp baking powder
- icing for cookies
Instructions
Preparation
- Assemble all ingredients to avoid last minute rush.
Method
- Preheat Oven to 180°C / 350°F and line 2 baking sheets with parchment paper.
- Using a Whisk, beat butter and sugar in a Mixing Bowl until incorporated together.
- Now, add egg and vanilla extract and beat until completely well combined.
- Then, sieve flour, baking powder, and salt. Mix well and beat until the flour is incorporated well.
- Dust work surface with flour, scrape dough out of Mixing Bowl. Cut in half and shape into 2 discs.
- Roll out to 0.3cm for thinner, crispier cookies or 0.6cm for thicker, softer cookies, sprinkle some flour under and over the dough so it doesn't stick.
- Using Cookie Cutters, press out shapes and with the help of a Spatula, transfer shapes to prepared baking sheets. You can keep the leftover dough in fridge for later use.
- Bake for 10 minutes and then swape trays halfway. Bake until the surface is golden and the edges are just beginning to turn light golden.
- Let the Cookies cool completely on trays.
- Decorating Option – Dip cookie in melted chocolate and decorate with icing sugar or silver balls.
- Or serve Christmas Cookies plain. Suit yourself, they taste wonderful in any way!

Notes & Tips
- Number of cookies: It will depend on cut out sizes and how thick you roll your dough
- Swapping trays halfway: this means that you put both trays in the oven with one in the middle of the oven and the other underneath. Halfway through the bake time, switch them around so the one underneath moves to the top shelf, and the tray on top moves to the shelf underneath. This ensures they both bake evenly because the top shelf bakes faster than the shelf underneath.
- Storage: Keeps in an Airtight Container for a week.
