But this Cake Recipe can be made without alcohol and no need overnight soaking of dried fruits.This easy Christmas Cake is a traditional fruit cake with a moist and velvety texture. Ingredients
Dried fruits or you can add per your choice
- 150 g glace cherries
- 1 ¼ cup apple juice
- 150 g dried apricots
- 180 g dates / khajoor
- 300 g raisins
- 1 cup apple juice
For Cake
- 1 2/3 cups all purpose flour / maida
- tbsp butter, unsalted
- 1 ½ cups brown sugar
- ½ cup oil
- 3 egg
- ¾ cup walnuts
- 3 tbsp maple syrup
- ½ tsp baking powder
- ½ tsp salt
- ½ tsp cinnamon
- ½ tsp nutmeg

Preparation
- Assemble all ingredients together to avoid last minute rush.
Method
For Soaking Dried fruit:
- Add all dried fruit and juice in a large Bowl. Microwave 2 minutes on high or until hot.
- Mix well to coat all fruit in liquid. Cover then set aside for 1 hour (to plump up/soak and cool).
For Cake:
- Preheat Oven to 160°C / 320°F and line a 8 – 9" round Cake Baking Bowl with baking paper.
- Using a Hand Mixer, beat butter and sugar in a Mixing Bowl until smooth and creamy for about 1 minute or so.
- Add oil and maple syrup in the Mixing Bowl and beat until combined.
- Add salt, baking powder and all spices and beat until mixed well. Now add eggs one by one and beat until mix well.
- Add all purpose flour and beat to mix well. Now, stir in the fruit mix including the liquid and walnuts.
- Pour into Cake Baking Bowl and bake for 3 hours 15 minutes in an Oven. Check by inserting Skewer into middle, should come out clean with no batter on it.
- Remove from Oven and let it cool for 20 minutes before transferring to rack or Tray for decorating.
- Serve plain or decorate with your unique ideas.

Notes & Tips
- Choosing dried fruits: Feel free to choose dried fruits of your choice.
- Add ons: You could also add mixed peel (is a store bought mix of diced, dried, crystallized orange and lemon peel).
- Apple Juice: If you are making it without alcohol then I find Apple Juice the best alternate. You can also use pineapple or orange juice.
- Dark brown sugar: You could use normal brown sugar or white sugar as well. I have used dark brown sugar to give Cake dark brown color.
- Maple syrup: Alternatively use Molasses for this Recipe. They both add richness and flavor to the Cake.
- Serving Suggestion: Cake can be eaten plain but for an extra special Christmas touch, serve it with custard (homemade or store bought).
- Storage: Store in an Airtight Container in fridge. It remains good for almost a year.
