Ingredients
  

  • 2 lbs Chicken Breast / boneless chicken cut into 1-inch cubes
  • 2 onions finely chopped
  • 2 cloves garlic minced
  • 1- inch ginger minced
  • 2 Tomato finely chopped
  • 1/2 cup vinegar
  • 2 tbsp Oil
  • 2 tsp Red Chilli Powder
  • 2 tsp cumin powder
  • 2 tsp coriander powder
  • 1 tsp turmeric powder
  • Salt and pepper to taste
  • coriander leaves / cilantro chopped, for garnish

Instructions
 

Pre-Cooking prep steps

  • In a large bowl, mix together the chicken cubes with red chili powder, cumin powder, coriander powder, turmeric powder, salt and pepper.
  • Cover the bowl and marinate the chicken for at least 2 hours in the refrigerator.
  • Heat the oil in a large pot or Dutch oven over medium heat.
  • Add the onions, garlic, and ginger and sauté until the onions are translucent.

Cooking steps

  • Add the marinated chicken to the pot and cook for about 5 minutes, until browned.
  • Add the tomatoes and stir well.
  • Add 1/2 cup of vinegar and 2 cups of water, bring the mixture to a boil, then reduce the heat and let it simmer for about 1 hour, or until the chicken is tender.
  • Stir occasionally, until the chicken is cooked through and the sauce has thickened.
  • Remove from heat and garnish with fresh cilantro.
  • Serve the hot Chicken Vindaloo with rice or naan bread.
