Ingredients
- 1 cup ghee / clarified butter Ghee
- 2 cup Besan / Gram flour Besan
- 1 cup water
- ¼ tsp cardamom powder
- 1½ cup Sugar
- 1 cup Milk Powder
- 2 tsp pistachios chopped
- 2 tsp almond / badam chopped
Instructions
- Take a Wok( kadai), heat 1 cup of clarified butter and add 2 cups of Gram flour. Roast on low flame until the besan turns aromatic.
- After 10 minutes, the besan will start to release ghee.
- Now add 1 cup milk powder, ¼ tsp cardamom powder and mix well. Do not overcook.
- In an another pot ,take 1½ cup sugar and 1 cup water. Dissolve the sugar and boil for 5 minutes until the sugar syrup turns to 1 string consistency.
- Add in prepared besan milk powder mixture and stir continuously keeping the flame on low.
- Cook until the mixture holds together and turns to smooth consistency.
- Transfer the mixture to a tray lined with butter paper. Tap twice and top with 2 tbsp pistachios, 2 tbsp almond.
- Rest it for 30 minutes or until it sets completely. Now cut with a sharp knife to the size of your choice.

- Roast Besan Properly: The most important step in making besan burfi is to roast the besan properly.
- Sift the besan before adding it to ghee: This gives the burfi a nice, smooth texture. So ,do the additional step of sifting the besan.
- Milk Powder: It is best to take full fat milk powder for best results.
- Sugar Syrup Consistency: Make sugar syrup as instructed to set Burfi perfectly.
- Cutting the pieces of Burfi: Don’t refrigerate the mixture before cutting into pieces. If you will do that, burfi will not cut properly.
