Ingredients
- 1 tsp salt
- ¼ tsp turmeric powder
- ½ tsp coriander powder
- ½ tsp Red Chilli Powder
- 1.5 tbsp oil
- 1 tsp Cumin (Jeera)
- 2 potatoes chopped
- 1 cup French beans chopped
- ¼ tsp aamchur / dry mango powder
- coriander leaves / cilantro
Instructions
Preparation
- Assemble all ingredients together to avoid last minute rush.
- Wash, peel and chop potatoes into small pieces.
- Also, chop French beans in smaller pieces.
Cooking
- Heat 1.5 tbsp oil in a kadai or pan over medium to low flame.
- Add 1 tsp cumin seeds in it and let the cumin crackle.
- Now, add salt, turmeric, coriander powder and red chili powder in the oil.
- Saute the spices well for few seconds.
- Then, add chopped potatoes in the pan and fry for 1-2 minutes with the spices.
- Now, add chopped beans and mix with the potatoes so that everything is mixed well.
- Cover the pan with the lid and cook for 10 mins or until veggies are cooked properly. Stir occasionally.
- When potatoes and beans are cooked properly, sprinkle ¼ tsp dry mango powder/ amchur powder. Mix well with the veggies.
- Garnish with coriander leaves and serve with roti or paratha.
