Ingredients
  

  • 1 tsp salt
  • ¼ tsp turmeric powder
  • ½ tsp coriander powder
  • ½ tsp Red Chilli Powder
  • 1.5 tbsp oil
  • 1 tsp Cumin (Jeera)
  • 2 potatoes chopped
  • 1 cup French beans chopped
  • ¼ tsp aamchur / dry mango powder
  • coriander leaves / cilantro

Instructions
 

Preparation

  • Assemble all ingredients together to avoid last minute rush.
  • Wash, peel and chop potatoes into small pieces.
  • Also, chop French beans in smaller pieces.

Cooking

  • Heat 1.5 tbsp oil in a kadai or pan over medium to low flame.
  • Add 1 tsp cumin seeds in it and let the cumin crackle.
  • Now, add salt, turmeric, coriander powder and red chili powder in the oil.
  • Saute the spices well for few seconds.
  • Then, add chopped potatoes in the pan and fry for 1-2 minutes with the spices.

  • Now, add chopped beans and mix with the potatoes so that everything is mixed well.

  • Cover the pan with the lid and cook for 10 mins or until veggies are cooked properly. Stir occasionally.
  • When potatoes and beans are cooked properly, sprinkle ¼ tsp dry mango powder/ amchur powder. Mix well with the veggies.
  • Garnish with coriander leaves and serve with roti or paratha.
