- ½ cup Besan / Gram flour besan
- Salt
- 1 tsp Red Chilli Powder
- pinch turmeric powder
- pinch Asafoetida / hing
- ¼ tsp aamchur / dry mango powder
- ¼ tsp garam masala
- ½ tsp ginger garlic paste
- ¼ tsp coriander powder
- water

- 1 Eggplant / brinjal / baingan
- 3 tbsp oil
Instructions
Preparation
- Assemble all ingredients together to avoid last minute rush.
- Cut brinjal in ½ inch round pieces, then slice into half.
- Add all ingredients listed in batter and make medium thick consistency of batter.
- Dip each brinjal piece in the batter gently and make sure it is nicely covered with batter.
- Let them rest for 20 mins. This is an important step so that brinjal pieces soak all spices. This makes brinjal pakora more flavorful.
Cooking
- Now, heat 3 tbsp oil over medium flame in a big Pan or Tawa.
- Gently transfer all batter covered baingan pieces in the Pan.
- Shallow fry from both sides till pakoras are cooked completely and turn into crispy outer layer.
- Alternatively, pakoras can be deep fried in hot oil also.
- Transfer to the kitchen towel or absorbent paper.
- Serve with chutney and sauce.
