Ingredients
  

  • ½ cup Whole wheat Flour
  • ¼ cup suji / rava / semolina
  • 4 tbsp ghee / clarified butter
  • 1 cup milk
  • ½ cup sugar
  • 7-8 cashew
  • 7-8 almond / badam
  • 1 tbsp sunflower seeds optional

Preparation

  • Assemble all ingredients together to avoid last minute rush.
  • Roughly chop cashews and almonds.

Cooking

  • Heat Kadai or Pan over low flame and add sunflower seeds. Dry roast them. Keep aside. This step is optional and can be skipped if not using sunflower seeds.
  • Then, add 2 tbsp ghee in same Pan and add halved cashews and almonds. Fry them for a minute over low heat. Remove from the Pan.

  • Add whole wheat flour in the same Pan and mix it with the ghee.

  • Add remaining 2 tbsp ghee in the Pan and mix with the wheat flour.
  • Add semolina and mix with the whole wheat flour. Keep heat at low flame.
  • Roast flour-semolina mixture over low heat. Stirring continuously.
  • Roast more, it will take approx. 8-10 minutes.
  • Gradually, ghee starts separating from the mixture. Perfectly roasted.
  • Then, add milk in the mixture while stirring continuously so that no lumps are formed.
  • Add sugar also and mix very well.
  • Stirring continuously over low flame until milk gets absorbed completely by flour.
  • Transfer to the Serving Bowl and garnish with roasted cashews, almonds and sunflower seeds.
  • Serve hot. Enjoy!

Notes & Tips

  • Choosing Wheat Flour: It is always best to use wheat flour with coarse texture to make halwa or you can use freshly milled wheat flour instead of packaged one. Use 100% pure wheat flour to make Atta Halwa Recipe.
  • Cardamom Powder: It is an optional ingredient and could skip as per personal choice.
  • Using Ghee: I have shared Homemade Ghee Recipe in my other post. For best Halwa, always use pure Ghee or Homemade Ghee.
  • Sweetness: To make Kada Prasad sweet, you could use white sugar or brown sugar or jaggery depending on your choice. Feel free to adjust sweetness as per your taste buds.
  • Storing Atta Halwa: Transfer the leftover halwa to an Airtight Container and store it in the fridge. Before serving, heat the halwa in a Microwave for 1 – 2 minutes or till it is warm enough to eat. Or you can warm it in Tawa as well over gas stove.
