Ingredients
  

  • 2 tbsp Oil
  • 1 Potatoes
  • 1-2 green chillies
  • ½ tsp turmeric powder
  • pinch Asafoetida / hing
  • pinch chaat masala
  • pinch Garam Masala
  • Salt
  • coriander leaves / cilantro

Instructions
 

Preparation

  • Assemble all ingredients together to avoid last minute rush.
  • Peel the potatoes and cut into approx. ½ inch slices. Dip in the water to remove the starch and helps to avoid discoloration.

  • Slit the green chilies and keep aside.
  • Now, remove the potato slices from the water and let them dry a bit.

  • Then, add all spices in a Mixing Bowl and mix well.

  • Coat each potato slice well with the spice mixture.
  • Also, coat green chilies with the spice mix.

Cooking

  • Heat oil in a tawa or frying pan over medium to high flame.
  • When the oil is hot enough, place the coated potato slices in the pan. Fry on medium to low flame.
  • When you notice one side is lightly crisp, flip to other side and fry the second side.
  • Flip again for a couple of times and fry till the potato slices are crisp and golden.
  • Also, fry the green chilies at the end in the same pan. You don’t need to add extra oil.

  • Transfer fried slices on kitchen paper towels to get rid of extra oil.

Notes & Tips

  • Traditionally, Aloo Bhaja or Potato Fries are made in mustard oil. But, if you are allergic to mustard oil then use any vegetable oil. I make the recipe with both ways.
  • You can also coat potato slices in rice flour before placing in oil to get crispier fries. This way potato also not absorbed too much oil.
