Ingredients
- ½ kg Eggplant / brinjal / baingan eggplants
- 1 inch ginger
- 2 cloves garlic
- 2 onions
- 1 to Tomato
- 1 ½ tbsp mustard seeds / rai
- 1 tbsp fenugreek seeds / methi seeds methi seeds
- 1 tbsp Fennel (Saunf) saunf
- 1 tsp Cumin (Jeera) jeera
- 1 tsp onion seeds kalonji
- 1 tsp Salt
- 1 tsp turmeric powder
- 1 tsp Red Chilli Powder
- 1 ½ coriander powder
- 2 tbsp aamchur / dry mango powder amchur powder
Instructions
Preparation
- Assemble all ingredients to avoid last minute rush.
- Wash and cut baby brinjals with four vertical slits along with stems.
- Wash and chop onions, garlic, ginger and tomato.
- Grind mustard seeds, fennel seeds, fenugreek seeds, cumin seeds and onion seeds in a Grinder. Set aside.
Cooking
- Heat oil in a Frying Pan or Cast Iron Skillet and add chopped ginger, garlic and onions into it and cook them till they turn translucent.
- Now, add tomatoes into it and mix very well.
- Add brinjal pieces to the Pan or Skillet and toss to mix. Now, add salt and turmeric powder and mix well.
- Add a little water, cover with a lid and cook till brinjals are soft. Add enough water to cook brinjals.
- Cook for 3-5 minutes and then add red chilli powder, coriander powder and the prepared grinded powder and mix well.
- If the masala sticks or dried up, add little more water.
- Now, add dry mango powder at the end and mix well.
- Cook for another 2 minutes and your Achari Baingan is ready to serve!

- Brinjal or Eggplants: If baby eggplants are not available, then you can choose 2 big eggplants and cut them into 2 inch long thick pieces and cook the same way.
- Spices: You can always adjust spices as per your taste preference.
- Dry Mango Powder: You can opt for ½ lemon juice in place of dry mango powder to give the tangy flavor.
- Oil: You can choose any neutral tasting oil to prepare Achari Baingan Recipe. In India, mostly prefer to use mustard oil to prepare this recipe but I have used olive oil as my husband does not like taste of mustard oil.
