Ingredients
  

  • ½ kg Eggplant / brinjal / baingan eggplants
  • 1 inch ginger
  • 2 cloves garlic
  • 2 onions
  • 1 to Tomato
  • 1 ½ tbsp mustard seeds / rai
  • 1 tbsp fenugreek seeds / methi seeds methi seeds
  • 1 tbsp Fennel (Saunf)   saunf
  • 1 tsp Cumin (Jeera) jeera
  • 1 tsp onion seeds kalonji
  • 1 tsp Salt
  • 1 tsp turmeric powder
  • 1 tsp Red Chilli Powder
  • 1 ½ coriander powder
  • 2 tbsp aamchur / dry mango powder amchur powder

Instructions
 

Preparation

  • Assemble all ingredients to avoid last minute rush.
  • Wash and cut baby brinjals with four vertical slits along with stems.
  • Wash and chop onions, garlic, ginger and tomato.
  • Grind mustard seeds, fennel seeds, fenugreek seeds, cumin seeds and onion seeds in a Grinder. Set aside.

Cooking

  • Heat oil in a Frying Pan or Cast Iron Skillet and add chopped ginger, garlic and onions into it and cook them till they turn translucent.
  • Now, add tomatoes into it and mix very well.
  • Add brinjal pieces to the Pan or Skillet and toss to mix. Now, add salt and turmeric powder and mix well.
  • Add a little water, cover with a lid and cook till brinjals are soft. Add enough water to cook brinjals.
  • Cook for 3-5 minutes and then add red chilli powder, coriander powder and the prepared grinded powder and mix well.
  • If the masala sticks or dried up, add little more water.
  • Now, add dry mango powder at the end and mix well.
  • Cook for another 2 minutes and your Achari Baingan is ready to serve!

Notes & Tips

  • Brinjal or Eggplants: If baby eggplants are not available, then you can choose 2 big eggplants and cut them into 2 inch long thick pieces and cook the same way.
  • Spices: You can always adjust spices as per your taste preference.
  • Dry Mango Powder: You can opt for ½ lemon juice in place of dry mango powder to give the tangy flavor.
  • Oil: You can choose any neutral tasting oil to prepare Achari Baingan Recipe. In India, mostly prefer to use mustard oil to prepare this recipe but I have used olive oil as my husband does not like taste of mustard oil.
  • What else can add with Brinjal? You can add pan fried potato wedges in the dish and mix well with the cooked brinjals. Your Achari Baingan Aloo Recipe is ready.
